According to the Canadian Distillers Association, Canada has been making whisky for over two centuries. In 1769, the first Canadian distillery opened in Quebec City. Many Canadians however, give John Molson credit for being the first distiller to produce whisky in Canada in 1799.

These early settlers who farmed in Nova Scotia found the land as hard as their former home, with only the hardest of grains surviving. With rye being the hardest and most abundant, it became the grain of choice for making whisky. Selling this whisky provided extra income for the small farmers settling in Canada.
Canadian whisky today is still written in the Scottish way; without an ‘e’. By definition, Canadian whisky is a grain spirit that has been aged in charred oak barrels for a minimum of three years. By contrast, our neighbours in the United States do not have an aging requirements their definition. This helps to explain why American Whiskey s spelt with an ‘e’. Our Canadian whiskies cannot legally be labeled “rye whisky” in Canada unless it meets Canadian aging standards.
The most important grain ingredient used in Canadian whisky is corn, along with smaller quantities of barley malt and rye. Whisky distillers look for different types and styles of corn because each grain contributes unique flavours to the final product. Rye is often a small part of the blend, but it contributes the most flavour. The more rye in the blend, the more spice you can smell in the aroma of whisky.
During the aging process, whisky undergoes significant changes through chemical reactions between wood, water, and temperature. Master distillery blenders take different types of matured whiskies and blend them with a house recipe. When the criteria of quality and consistency are met by their standards, the blended whisky is sent to be packaged.
Today there are more than 500 Canadian distilled spirit brands available, with Canadian whisky being the number one selling product category. Canadian Whisky: something Canadians can be proud of!
